Asian Green Bean Bruschetta

Asian green bean bruschettaLeftovers for lunch. Nothing like it. Last night I made an Asian green bean salad to have with some chicken and there were a few morsels left to be saved overnight in the fridge. Today I toasted a slice of homemade nutty wholemeal bread and topped it with the salad and a drizzle of olive oil. The garlic and ginger had infused and gave the chilled topping a real punch. Oh divine!

ingredients:
large handful french green beans (blanched)
2 large tomatoes
1 small green chilli (chopped)
2 cloves garlic (chopped)
inch cube fresh ginger (chopped)
1 tbsp dark soy sauce
1 tbsp Thai fish sauce
1 tsp sugar
handful fresh coriander (chopped)
wholemeal artisan bread toasted

method:
1. blanch the green beans and run cold water over them immediately to chill
2. roughly cut up the tomatoes into bite sized chunks, not too small
3. chop the chilli, garlic and ginger and put in a bowl
4. add the soy sauce, fish sauce and sugar, stir and let it sit to infuse for a bit
5. toast the bread and let it cool slightly so as not to warm the topping
6. pour the dressing over the green beans and tomatoes, add the chopped coriander and toss
7. lift some of the salad out of the bowl and place on top of the toast, careful not to bring too much liquid otherwise the toast will go soggy
8. drizzle with olive oil and devour

Best left in the fridge overnight for the garlic, ginger and chilli to really infuse.

    website. Do you ever run into any browser compatibility problems?
    A handful of my blog visitors have complained about my website not working correctly in Explorer but looks great in Firefox.
    Do you have any recommendations to help fix this issue?

    • Hi there, really sorry for the late reply! I’ve tested on all browsers and all seems to be working well. I purposely chose a simple clean design so my blog focus would be on usability. My advice is to always keep things clean, lots of white space, clear navigation and signposting and constantly think about the user and who they’ll be browsing. The more complicated the functionality the more room for error. I’m generalising but I try and adopt the Apple approach… keep it simple… and you can’t go wrong.
